The nugget numbers: how much chicken is in a chicken nugget? (2024)

A lighter piece for a long day.

According to Epictetus, the right way of eating is the same as the way of living: "just, cheerful, equal, temperate, and orderly."

More precisely:

The nugget numbers: how much chicken is in a chicken nugget? (3)

So when I came across a chicken nugget data set atKaggle, I was fascinated. This person had weighed their individual nuggets from McDonalds and Wendys.

Like Epictetus, I wanted to explore how "equal, moderate, and well-ordered" the nuggets could be—how much chicken is in the chicken nugget?

According to this dataset, McDonald's nuggets weigh an average of 16.5g - and they range from 21g to 14.6g. Wendy's nuggets weigh an average of 17.2 g, ranging between 18.3 and 15.9 g. There was a standard deviation of 1.68 g for McDonald's nuggets and 0.70 g for Wendy's nuggets.

The nugget numbers: how much chicken is in a chicken nugget? (4)

As you can see from the highly compressed Wendy's logo, Wendy's has a more consistent nugget experience - a larger nugget AND less variation in nugget weight compared to McDonald's.

But which nugget actually has the MOST chicken of the nuggets (most chicken-chicken nugget?)

disclaimer: I am vegan. As a vegan, I have to inform you that I am vegan. It's a vegan rule of law. This is also not a scientific article. These are educated guesses (as most things are)

Looking at the nutritional data for a 6-pack of nuggets from McDonalds and Wendys, some nutritional differences emerge. Wendy's nuggets contain more fat (27 g vs McDonald's 25 g) and McDonald's has more carbohydrates and protein.

The nugget numbers: how much chicken is in a chicken nugget? (5)

Every food we eat is composed of macro and micronutrients. From the macros, we can calculate the number of calories in each food.

  • Each gram of carbohydrates = ~4 calories
  • Each gram of protein = ~4 calories.
  • Each gram of fat = ~9 calories.
The nugget numbers: how much chicken is in a chicken nugget? (6)

So if we take our McDonald's nuggets, we can calculate the calories based on the listed fat, carbs, and protein.

  • McDonald's Nuggets Calories
  • (25 g fat) x (9 g cal/gram) = 225 calories from fat
  • (25 g carbohydrates) x (4 kcal/gram) = 100 calories from carbohydrates
  • (23 g protein) x (4 cal/gram) = 92 calories from protein

Side by side comparison of the two nuggets:

The nugget numbers: how much chicken is in a chicken nugget? (7)

The chart below breaks down each macro's calories into percentages. Wendy's nuggets are 37% fat, 33% carbohydrates and 30% protein. McDonald's is 34% fat, 34% carbohydrates and 32% protein. Both are 100% nugget.

The nugget numbers: how much chicken is in a chicken nugget? (8)

For comparison: a regular piece of chicken consists of 90% protein and 10% fat.

So nuggets are certainly not "regular" chicken, but we already knew that. But how much "regular chicken" is in chicken nuggets?

The nugget math: McDonald's McNugget

McDonalds has the following macro division:

The nugget numbers: how much chicken is in a chicken nugget? (9)

McDonald's nuggets are about 34% breaded (meaning they are about 34% carbohydrates, as explained above). This is not chicken. To illustrate, let 66% of the nugget be the "chicken" in our chicken nugget.

The nugget numbers: how much chicken is in a chicken nugget? (10)

Taking our previous example of all-white chicken (chicken is 90% protein and 10% fat), we expect the remaining 66% of the nugget to be ~7% fat and ~59% protein.

The nugget numbers: how much chicken is in a chicken nugget? (11)

But the remaining 66% nugget is actually 34% fat and 32% protein - far from the expected 7% fat and 59% protein!Quite the nugget nonplus!

We have excess fat (compared to what it would be if the rest of the nugget was pure chicken).

The nugget numbers: how much chicken is in a chicken nugget? (12)

The excess fat is ~27%, most likely from various types of vegetable oils and cooking oils.

It Leavesthe rest of the chicken nugget was left to be a real chicken: a spicy ~39%.

The nugget numbers: how much chicken is in a chicken nugget? (13)

A chicken nugget is 61% bread and fat, 39% chicken.

This actually fits well with Merriam Webster's true definition of nugget - "a small portion or nugget of anotherdust." (note, they don't specify the content)

The nugget numbers: how much chicken is in a chicken nugget? (14)

Wendy's Nuggets

At McDonalds, we get about 39% chicken in our chicken nugget.

Is Wendy better? More value for money?

No, Wendy's nuggets are only 37% real chicken! All the math is below.

The nugget numbers: how much chicken is in a chicken nugget? (15)

Even taking into account Wendy's larger 17.2g nugget, in absolute terms you still get less chicken compared to the 16.5g McDonalds nugget. To be (too) precise, each Wendy's nugget has 6.3 g of chicken and each McDonald's nugget has 6.4 g of chicken(average).

The 0.1g adds up overtime. Composition, but for nuggets.

If you eat nuggets, it seems like the McNugget might be the highest value "real" chicken nugget you can get - Wendy's might have a larger nugget to offer - but it might not be as chicken-like as you'd expect.

(Note, this is obviously not an *exact science*)

Why am I looking at nuggets? That is a good question. I don't have a good answer. I find datasets (like this one onKaggle), and I try to build stories with it.

With this story I was shocked that there was no more than 50% chicken in the chicken nugget. As a vegan, reading the ingredients gave me a stomach ache - but I also think we should actively treat our bodies with the love and care it deserves. Chicken nuggets are not good for you.

But then one of my friends brought up an important point: what does the nugget meanmeans? They are non chicken nuggets masquerading as chicken nuggets - they are notsincerely.

Is reality real? If our chicken nuggets contain less than 50% chicken, are they really chicken nuggets?

Is Jean Baudrillard right in his workSimulacra en simulation? do we really"all reality and meaning replaced by symbols and signs, and the human experience is a simulation ofreality?

This reminded me of the fourth stage of drawing sequence that he highlights in his book:

This is a regime of total equivalencecultural products no longer even have to pretend to be real in a naive sense, because the experiences of consumers' lives are so overwhelmingly artificial that even claims of reality are considered to be contained in artificiality,"hyperrealistic" conditions.

Bron: Simulacra en Simulatie

Our brains fill voids in our existence, perceive things that are not there, confuse reality and representation. Perhaps these nuggets are just a symbolic representation of all that nuggets used to be, a psychological construct we build on to gain a sense of reality.

Welcome to the desert of reality.
