It is often difficult to understand why the same size tubs of ice cream can vary so much in price. Cheaper bathtubs may seem like a better value, but they are sold by weight rather than size. Heavier tubs tend to be more expensive – and for good reason.
In its most basic form, it is simple to make: a combination of milk, sugar and cream creates a basic mixture. Once the mixture has cooled, add the flavors. This initial method is the same for almost all manufacturers.
However, the way ice cream and sorbet mixes are processed into the next stage of the production process varies – and this is what sets us apart from other brands.
Once the flavors have been added to the base, it is kneaded and frozen simultaneously. Air is then added to the mixture – and the amount of air bubbles has a huge effect on the density.
Manufacturers of cheaper ice creams tend to use free-flow machines that fill their mixtures with more air. The increased air volume reduces the amount required per tub and can therefore be sold at a lower price.
