What is Tahdig?

It is a golden crust that forms during the cooking process at the bottom of the pan and can be made with rice, potatoes, lettuce leaves, pasta or even bread as used in this recipe.

Sabzi means herbs in Farsi (Persian language) and Polo means cooked rice.

Sabzi Polo is made traditional to celebrate Nowruz (Persian New Year), which is in Iran at the end of March and the first day of spring.

Tips to make Persian Urtris

  1. It is always best to use fresh herbsAnd good qualityWedding.Jo better ingredients, the better it will taste

Ingredients

  • 2 cup Wedding
  • 250 G Fresh herbs.I used a straight combination of coriander (coriander), dill and parsley.
  • 2 Spring onions
  • Whole garlic
  • 2 teaspoon salty
  • Libanese of Arabische flatbread
  • 2 tablespoon olive oil
  • 5-6 cup water
  • 3 teaspoon Floral Saffron (optional)
  • 1-2 teaspoon Advieh (Persian spice mix) Optional

Instructions

  • Remove parsley and dill leaves from the stems together with the thick coriander stems.

  • Place the rice in a non -stick can and rinse with water approx. 5 times until the water is usually clear.10-15 minutes.

  • Cook the rice to all

  • Add olive oil to the same saucepan and place the flat bread in the pan to cover the bottom.

  • Add a layer of rice, about ⅓ of the rice and top with ⅓ of the chopped herbs.

  • Chop the top of the garlic head so that the tops are visible but are still intact.

  • With a chopstick or the handle on a spoon, carefully make 6 holes in the rice to the bottom of the pot.

    Take the roof with a clean kitchen towel, place on the pan and cook for 30 minutes on a low heat.

  • Remove the heat, remove the lid and turn the pan on a large dish on a large dish.Earn and enjoy your Sabzi polo evenly
